I don't know what I was thinking when I menued for this week. I think I was being lazy. I had a couple of meals left over from last week that I didn't get to fix and I guess I just added to that. Really I don't remember since it's been like 3 days ago and I can barely remember what I did 10 minutes ago. But it looks something like this....
meatloaf and mashed potatoes w/salad
sloppy joes with oven fries
roast with mashed potatoes (whatever!)
lasagna (impossible since I forgot to buy noodles at the store)
Doesn't that look incredibly boring? And to top it off I left it at 4 meals. What was I thinking I was going to do for the rest of the week?
I did make 4 meatloaves last night and was so busy preparing them for the freezer that I forgot to thaw something out for tonight. I have a few chicken breasts so I'm thinking chicken pot pie since it doesn't use so much chicken.
I need some new ideas.

Sandy, I found this casserole on www.southernplate.com through a link on someone elses blog. It looks easy and delicious. I can't wait to try it. Most of the ingredients are staples you might have.
Country Casserole
2 cups small shell pasta, cooked and drained
3 cups frozen mixed vegetables, cooked and drained
2 cups shredded cheddar, divided
One can French fried onions, divided
2 cups shredded cooked chicken (can use canned chicken)
1 can cream of chicken soup
¼ cup milk
1 tsp pepper
1 tsp garlic powder
½ tsp salt
Preheat oven to 350 degrees. Combine everything in a large bowl, reserving half of the cheese and half of the onions for topping later. Spoon into 9x13 casserole dish. Bake for twenty five minutes. Top with remaining onions and cheese, bake until cheese is melted, about five minutes more.
Freezing options: Instead of freezing this in your casserole dish, simply spoon it into a gallon ziploc bag. Lay the bag flat so that it will thaw out quicker and place it in your freezer. On the day you want it, take it out the night before and refrigerate or place in fridge that morning.
If you forget to do all of this, no sweat! Just microwave the bag until it thaws just a bit, pour into your casserole, and bake!
To bake a casserole that is still frozen, simply place in the oven while the oven preheats. This allows the casserole to thaw quickly and then bake to perfection!

Ya lazeee good fer nuthin'.
Jody, that does look good. I love everything with french fried onions! Thanks for posting this.
Sandy,
We tried this last night and it was so good and I loved the flavor the french fried onions gave it. I doubled it and made 2 big 9x13 pans - one for dinner, one for freezer - my favorite way to cook!!!
