A New White Bean Recipe

Here's a new recipe that I made for lunch today. The name of it is Stewed White Beans With Tomatoes. Boring! We gotta come up with something better.

1# dried white beans soaked
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, chopped
1 dried bay leaf
1 can (28oz) diced tomatoes
2 T oil
2 garlic cloves minced
1/8 tsp. red pepper flakes

Saute veggies and garlic in oil. Cook beans with bay leaf in chicken broth until tender. Add veggies and canned tomatoes. Salt and pepper to taste. Cook with lid off until liquid reduces and the soup is thick.

This is my new favorite way to cook white beans. We had this with fresh bread and butter.

If you crumble some garlic toast crumbs on top we call it "White Bean Cassoulet" :)
