Taco Lentils

It worked!

We ate the whole pot of lentils and nobody threw up. AND they liked them for the most part. It was a good thing the girls and I were gone b/c there wouldn't have been enough for us anyway when the boys were through. That's a good thing.

My guys said it was a keeper!

Taco Lentils

1 cup finely chopped onion
1 minced garlic clove
1 teaspoon canola oil (I used olive oil)
1 cup dried lentils, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
2 1/2 cups chicken broth (I used veggie)
1 cup salsa
12 taco shells
1 1/2 cups shredded lettuce
1 cup chopped fresh tomato
1 1/2 cups shredded cheese
sour cream

1. In a large skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin, and oregano; cook and stir for 1 minute.

2. Add broth; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Uncover; cook for 6-8 minutes or until thickened. Mash lentils slightly. Taste and adjust seasonings.

3. Stir in salsa. Spoon about 1/4 cup lentil mixture into taco shell. Top with lettuce, cheese, tomato, and sour cream.

I get overwhelmed thinking about what to make for supper when I find myself at a loss as to how to make the changes that I feel are necessary.

I read in my Bible yesterday morning... "Feed me with the food that is needful for me." Prov 30:8 So, I prayed it back to the Lord. Later that day I got that recipe in my inbox.

So thankful that God has met me right where I am!
